Licencing and insurance – In the majority of Southern California municipalities, mobile food cart vendors, food trucks, and caterers are required to obtain a licence that verifies a number of very essential details. This includes the observance of sanitary food preparation rules (to limit food-borne maladies) and the acquisition of the necessary permits to operate a business in these areas. When a caterer fails to live up to the promises and expectations of a food provider (e.g., if someone gets ill from the food), event attendees require a defendant with deep pockets to sue. You do not wish to be in that position.

2. Ingredients – Ordinary, factory-farmed produce, dairy, and proteins are no longer acceptable. Freshness is important, and so are organic ingredients when possible. Also search for a unique twist, such as signature salsas, condiments, and sides. A memorable event is one in which the host and caterer provide something a little out of the ordinary and adventurous. Check the taco cart’s menu twice for accuracy.

3. Chef credentials – In Los Angeles County and many other California municipalities, the stewards should be in possession of a Food Handler Card (CFH Card). This addresses the issue of sanitation. Now, however, food trucks, mobile taco kiosks, and purveyors in general share what their master chefs know, where they were trained, and which cuisines and travels have influenced their cuisine. Part of what makes dining so fascinating today is the proliferation of creativity, which is frequently manifested in fusions of culture, cuisine, ingredients, and creativity.
